WHAT WE’RE ALL ABOUT

I started baking at a young age with both of my Grannies, who were fabulous bakers. My Granny Kingan's larder was always full of fresh baking and she made the most delicious millionaire's shortbread. My Granny Richardson was famous for her melt in the mouth mince pies and shortbread. I also baked a lot with my Mum growing up and it has always been something I loved to do.

When I was diagnosed coeliac in 2016 I thought my baking days were over. For someone who loves bread, cakes, traybakes and all things gluten, it was a life-changing blow for me. At the time I didn't realise that it would actually drive me to bake and cook even more than ever before. I was then diagnosed dairy intolerant in 2019 and thought I'd never eat a decent cake again! I soon realised that a lot of gluten free and dairy free products available on the market were dry and tasteless, and very disappointing, so I started trying to recreate all my old favourites by baking them myself. It was not without it's disasters and I soon realised there was a reason why they all contained gluten in the first place! However, after lots of experimenting and recipe tweaking I managed to come up with some lovely bakes.

When COVID struck in early 2020, I spent a lot of my time in lockdown baking (and eating) lots of yummy treats. I spoke with my husband one day and told him I really quite fancied baking as a career and he told me to go for it! So I spoke to Environmental Health to find out if my kitchen was suitable and did my level 2 food and hygiene training and allergy training. Then I just had to decide what I was going to bake! Traybakes were what I originally thought about, but then I thought cookies would be a good idea. My husband told me not to be so stupid as my cookies were always a disaster - flat, greasy, rock-hard objects that were nothing like cookies! I spent the next 8 weeks making lots and lots and lots of cookies, until I finally came up with something truly delicious that I thought people might actually buy. This was when The Cookie Kitchen was born! And since then it has been going from strength to strength. I have been posting cookies all over the UK, I supply wholesale cookies locally and have done several big corporate orders. I'm now baking so much that I have outgrown my kitchen and had to convert another room into my Cookie Room! I have also recently converted am old horsebox in to a fab, new mobile Cookie Kitchen to cater at events and bring cookies to a town near you.

My aim is to bake delicious, gluten free treats that taste like "real" treats. Gluten free/dairy free doesn't have to be taste free. It doesn't have to be the weird, dry, unappetising cake in the corner. It can be a yummy cake that catches everyone's attention and looks and tastes utterly delicious.
